You can go to the store and pay cash for the sim card and minutes. No records. Only problem is that there is no data (unless you pay much more for a plan), so if the SP try to MMS you a photo of their front door to help you find it (like some of the agencies here), you won't get the photo.

I find using an app on the phone is a good option. You can always log out if you need to.
